- Ingredients:
- 8oz of FunGuy oyster mushrooms
- 4 cups beet greens
- 6-8 garlic cloves
- 4 tablespoons olive oil, divided
- pinch of salt
- 1 lemon
Beet the mid week dinner blues with a new and easy FunGuy oyster mushroom recipe!
We’ve taken earthy beet greens and our meaty oyster mushrooms, sautéed them together with a generous handful of garlic, turning them into a healthy dish can easily be served as a side, or turned into a main with the addition of pasta, rice, and your favorite protein!
DIRECTIONS:
- Separate and brush off any debris from the FunGuy oyster mushrooms with a damp cloth and trim the ends if necessary. Rinse the beet greens under cool running water and drain. Trim the ends and set aside. Peel and finely mince the garlic cloves.
- In a sauté pan, heat half of the olive oil over medium-high heat. Once the oil is hot, add half of the minced garlic to the pan and saute 1 minute. Add the oyster mushrooms to the pan and cook 2-3 minute on each side, or until browned and crisp around the edges. Transfer the mushrooms to a dish and cover to keep warm.
- Add the other half of the olive oil and remaining garlic to the pan and cook 1 minute. Toss the beet greens into the pan and sauté about 3-4 minutes, or until just wilted. Add the mushrooms back into the pan and stir. Cook another minute just to warm the mushrooms through. Cut the lemon in half and squeeze the juice from both halves over the mushrooms and beets. Season with salt as needed.
- Serve immediately.
