- Ingredients:
- 4 slices of whole wheat bread
- 2-4 medium sized tomatoes
- 4 tablespoons butter
- 8oz package of sliced FunGuy white button mushrooms
- 4 eggs
- ¼ cup shredded sharp cheddar
- Salt and black pepper to taste
Everyone should start the day with a fun breakfast once in a while, and what is more fun than breakfast inside more breakfast?
This FunGuy egg in a hole, an egg in buttery toast with sliced mushrooms and sprinkled with cheese, is sure to impress novices to the dish and create a bit of nostalgia for the already well initiated!
This particular recipe includes sliced tomato to help round it out with and make it a proper healthy start to the day.
DIRECTIONS:
- Lay the bread on a cutting board. With a circular cookie cutter or the rim of a cup, cut a circle out of the middle of each slice of bread. Thinly slice the tomatoes and set them aside.
- Heat half of the butter in a large skillet over medium high heat. Add the FunGuy mushrooms to the pan and allow them to brown lightly for about 2-3 minutes. Transfer them to a bowl.
- Lay two slices of the prepared bread flat on the bottom of the pan and allow them to toast about 1-2 minutes before turning them over. Crack the egg into the hole, add a few mushrooms to the toast and egg, and sprinkle ¼ of the cheese on top. Cover the pan with a lid and allow it to cook 3-4 minutes for the egg to set. Remove the lid and transfer the egg toast and mushrooms to a plate. Repeat with the other two slices of bread, eggs, and mushrooms.
- Season each with a sprinkle of salt and black pepper and serve with the tomato slices on the side.
