- Ingredients:
- 1 package of FunGuy shiitake mushrooms
- 2 cloves garlic
- 3 tablespoons olive oil
- 2-4 eggs
- 4 slices of crusty bread
- 2 tablespoons butter
- salt
- black pepper
- 2 green onions, chopped
Don’t grab that bowl of cold soggy cereal or that stale breakfast bar. Instead treat yourself like a FunGuy and cook up a hot breakfast that takes only 10 minutes!
Our shiitake mushrooms combined with a warm egg or two, and some buttery toast make for an eggcellent choice to start the day right!
DIRECTIONS:
- Brush off any debris from the FunGuy shiitake mushrooms with a damp cloth. Pop out the stem using your thumb, discard, and slice the caps. Peel and mince the garlic.
- Heat the olive oil in a sauté pan over medium-high heat. Add the garlic to the pan and sauté 1 minute. Add the sliced shiitake mushrooms to the hot pan and sauté 3-4minutes, or until just starting to brown.
- Move the mushrooms to one side of the pan and crack the eggs into the pan carefully. Let them cook 2-5 minutes or until the white is firm and no longer wet and the edges are lightly crisped. Gently flip the egg over, turn off the heat, and allow the top of the egg cook with the residual heat of the pan for about 1 minute.
- While the eggs and mushrooms cook, toast the bread slices in the toaster and butter when ready.
- Serve each plate with an egg or two, half of the sautéed shiitake mushrooms and buttered toast. Add chopped green onions and season with salt and black pepper to taste.
