- Ingredients:
- 8oz package of FunGuy crimini mushrooms
- 4 green onions
- 2 tablespoons butter
- 1 cup diced ham
- 8 eggs
- ½ cup milk, divided
- 4 pinches coarse salt
- 4 tablespoons olive oil
- fresh ground black pepper (optional)
Don’t commit the crime of skipping breakfast! Break a few eggs and whip up a crimini mushroom and ham omelette instead!
The omelette is a deliciously quick and healthy way to start the day, especially when loaded up with our crimini mushrooms, a handful of savory ham for a punch of flavor, and some fresh green onions on top. It would be criminial to miss out on!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the stems before slicing thinly. Rinse the green onions under cool water, remove the root end and any wilted parts then slice the white and green parts. Separate the green part from the white to use for garnish.
- Heat the butter in a sauté pan over medium heat. Add the white part of the onion to the pan and sauté 1 minute. Add the diced ham and mushrooms to the pan and sauté 3-4 minutes. Transfer everything to a bowl and cover to keep warm.
- Crack 2 eggs into a bowl and add ¼ of the milk and a pinch of salt. Beat the eggs with a fork until light in color and frothy.
- Heat ¼ of the olive oil in the sauté pan over medium-low. Pour the beaten eggs into the pan, swirl it around to make an even layer, and cook until the bottom of the eggs have become firm but the top is still a little runny. Add ¼ of the mushroom and ham mixture to one half of the omelette and fold the uncovered half over on top of the filling, allowing it to cook an additional 2-3 minutes or until the egg is cooked through. Transfer to a plate and season with black pepper and garnish with ¼ of the reserved green onion tops.
- Repeat with the remaining eggs and filling.
- Serve immediately!
