- Ingredients:
- 3 tablespoons olive oil
- 1 carrot, diced
- 1 shallot, minced
- ½ cup diced ham
- 8oz package of sliced FunGuy white button mushrooms
- 2 leeks, sliced
- ½ teaspoon minced rosemary
- ½ teaspoon dried thyme
- 4 tablespoons flour
- 4 cups vegetable broth
- 2 cups half and half
- 1 pound potato gnocchi
- Salt and black pepper to taste

Perfect for any rain or snow filled day where you just need something cozy to warm you from head to toe!
DIRECTIONS:
- Heat the olive in a large pot over medium high heat. Add in the carrot and shallot, stirring, and cook 2 minutes. Add in the ham and cook another 5 minutes or until lightly browned. Reduce heat to medium and add in the mushrooms, leeks, rosemary, and thyme cook 5 minutes or until the leeks are tender. Sprinkle the flour over the vegetables and ham and toss to coat. Cook 3-4 minutes.
- Pour the broth into the pot while stirring to avoid clumping, and bring to a boil. Allow to cook about 10 minutes.
- Bring a pot of water to a boil over high heat. Once it’s boiling, add in the gnocchi and allow them to cook until about 1 minute after they raise to the surface. Drain the gnocchi of excess water in a colander and set aside.
- Pour the half and half into the pot with the soup and stir well to combine. Allow it to return to a boil, reduce the heat to medium low and let it simmer another 10 minutes.
- Add the gnocchi to the soup pot. Taste the soup and season with salt and black pepper to taste. Cook an additional 5 minutes.
- Serve hot.
