• Ingredients:
  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • ½ teaspoon dried dill
  • ½ cup vegetable broth
  • ¼ cup heavy cream
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 sheets of puff pastry
  • 1 egg, beaten

Move over healthy food! It’s time to make mushroom for fun food the FunGuy way; with puff pastry pies full of our mushrooms! 

We’ve sautéed our mushrooms in butter until lightly browned, then made a creamy sauce with a little black pepper, a little dill, and stuffed it into puff pastry and turned them into little hand pies that are perfect for lunch, dinner, or as a mid-day snack! 

DIRECTIONS:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Melt the butter in a sauté pan over medium heat. Add the garlic to the pan and sauté 1 minute. Toss the FunGuy mushrooms, reserving a few mushroom slices to top each pastry pie, into the pan and cook 4-5 minutes, stirring frequently. Season the mushrooms with the dried dill and stir again. 
  3. Pour the vegetable broth into the pan, gently scraping any bits off the bottom of the pan. Allow it to reduce down to at least half and pour in the cream, stirring well. Allow the mixture to simmer until thick. Turn off the heat, taste and season with the salt and pepper, and stir again. 
  4. Lay one puff pastry sheet out and cut it into 6 equal pieces and transfer to the lined baking sheet. Lay the other puff pastry sheet and score it with a knife, making 1-inch long incisions along the top, careful not to cut through. Then cut into 6 equal pieces to place on top of the other puff pastry pieces over the filling.
  5. Spoon the mushroom mixture onto the pastries on the baking sheet, leaving about a ¼ inch around the edge free. Top with the scored puff pastry, pinching the edges together to seal it. Brush the tops of the pies with the beaten egg, add 2-3 mushroom slices to each. Sprinkle with dried dill if desired. 
  6. Bake the puff pastry pies in the oven for 20-25 minutes, or until the tops are browned and the pastry has puffed up. 
  7. Remove the pies from the oven and allow them to cool at least 5 minutes before serving!
