- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2 medium cucumbers, thinly sliced
- 1 red onion, thinly sliced
- 1 clove garlic, minced
- 1 dill sprig
- ½ teaspoon black peppercorns
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- ¼ cup white vinegar
- ¼ cup water
- ½ cup cream cheese, room temperature
- 1½ tablespoon horseradish
- 1 teaspoon Worcestershire sauce
- ½ tablespoon fresh chives, chopped
- salt and black pepper to taste
- 1 large loaf of rustic bread, divided into 4
- 1¼ pound sliced deli pastrami
- 2 medium tomatoes, sliced
- 6-12 green lettuce leaves, washed and dried

Quick pickled cucumbers and FunGuy mushrooms are layered with peppery slices of pastrami, juicy summer tomatoes, and a creamy horseradish spread on your favorite crusty loaf bread.
Enjoy these quick mushroom and cucumber pickles? Make a double batch and refrigerate to use all week long!
DIRECTIONS:
- Place the FunGuy mushrooms, cucumbers, onions, garlic, dill, black peppercorns, salt, and sugar into a medium sized container with a lid. Pour in the vinegar and water and stir well to cover everything in the brine. Cover and refrigerate for at least 1 hour before using. Make 24 hours ahead for a better flavor.
- In another bowl, stir together the cream cheese, horseradish, worcestershire sauce, and chives. Season with salt and black pepper to taste and stir again until smooth and creamy in texture.
- To assemble the sandwiches, spread the creamy horseradish sauce on two slices of bread before layering on one the pastrami, tomato slices, mushrooms and cucumbers, and finish with a leaf or two of lettuce and the other slice of bread on top. Serve immediately.
