• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 large cooked chicken breasts
  • 1 stalk celery with leaves
  • 1 shallot
  • 1 carrot
  • ¼ cup shelled walnuts
  • 2 tablespoons mayonnaise
  • 2 tablespoons plain Greek yogurt
  • Salt and black pepper
  • 4 croissants

Is it too hot to cook and tired of the same old cheesy ham sandwiches? No problem, try this easy FunGuy chicken salad croissant sandwich instead!

This can be whipped up with leftover or freshly cooked chicken, and is deliciously creamy and fresh tasting whether hot or cold.

It’s the new go-to “sandwich” that’ll you’ll be making over and over again!

DIRECTIONS:

  1. With a damp paper towel, gently clean each FunGuy mushroom of any debris and trim the stems. Slice the mushrooms as thinly as possible and place in a bowl. Cut the chicken breasts into ¼ – ½ inch cubes and add to the bowl with the mushrooms. Chop the celery and shallot and add to the bowl. Peel and finely shred the carrot into bowl. Break or chop the walnuts into small pieces.
  2. Stir the mayonnaise and yogurt in with the mushroom and chicken mixture. Taste and season with salt and black pepper as desired.
  3. Cut the croissants in half, leaving one side attached. Spoon the mushroom and chicken salad into each croissant and serve immediately.
