• Ingredients:
  • 4 FunGuy portobello mushrooms
  • 2 tablespoons olive oil
  • pinch of salt
  • 1 roasted boneless skinless chicken breast, shredded
  • ½ cup cream cheese, room temperature
  • 1 red bell pepper, diced
  • 2 spring onions, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon of salt
  • ½ teaspoon black pepper
  • 1/3 cup shredded Parmesan cheese

Here at The FunGuy Mushrooms there’s plenty of stuffed stuffers recipes peppering our page, but sometimes you have so mushroom for more than just a bite! That’s where our Portobello mushrooms make an eggcellent choice! 

This week’s recipe uses shredded chicken, diced sweet peppers, and loads of cheese to fill our Portobello mushrooms to the brim with flavor. Just add a fresh garden salad, a bowl of warm soup, or roasted veggies and they make the perfect lunch or dinner! 

DIRECTIONS:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy Portobello mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Transfer the mushrooms to a large bowl. 
  3. Drizzle the olive oil over the mushrooms and sprinkle a pinch of salt over them and toss well to coat each mushroom well. Transfer the mushrooms to the baking sheet and bake in the oven for 10-15 minutes or until they are just tender and liquid has pooled in the middle. 
  4. While the mushrooms bake, prepare the filling.
  5. Add the shredded chicken, diced pepper, and onion to a bowl with the cream cheese. Season with the oregano, thyme, salt, and black pepper and mix well to combine. 
  6. Remove the mushrooms from the oven and pour out any liquid that has accumulated in the cap, and return them to the baking sheet. Spoon the chicken and pepper cheese filling into each mushroom and sprinkle an even layer of the Parmesan cheese on top of each.
  7. Return the mushrooms to the oven and let them cook an additional 5-10 minutes, or until the cheese has turned a golden brown. 
  8. Remove the mushrooms from the oven and serve immediately.
