- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons olive oil
- 5 cloves of garlic, minced
- 1 head of cauliflower, cut into chunks
- 1 bay leaf
- 1 teaspoon salt
- Water
- Salt and black pepper to taste

This cauliflower and mushroom white sauce is the way to be more nutritious without sacrificing those tasty favorites. Use it as is or as a base for any white sauce you want without the addition of cream.
Just toss it with pasta, spoon over meat, or enjoy drizzled on roasted vegetables whenever a creamy sauce craving hits!
DIRECTIONS:
- Heat olive oil in a sauté pan over medium heat. Add the whole FunGuy mushrooms and minced garlic to the pan and cook 5-6 minutes. Transfer the mushrooms and garlic to a bowl without removing the oil from the pan. Add the sliced FunGuy mushrooms to the pan and sauté them for about 4-5 minutes or until lightly browned. Turn off the heat and cover the pan with a lid.
- While the mushrooms start cooking, prepare the cauliflower.
- Place a pot of water with the salt, bay leaf, and cauliflower on the stove over high heat and bring it to a boil. Cook about 10-15 minutes or until the cauliflower is tender.
- Once the cauliflower has been cooked, transfer it to a food processor or blender with a slotted spoon. Add in the whole mushrooms and garlic and a ladle of the cooking water from the cauliflower to the food processor and pulse until smooth. Add more water if needed to get the desired texture, but not too much or it will get runny.
- Taste the cauliflower sauce and add salt and pepper as necessary.
- Pour the cauliflower and mushroom sauce to the pan with the sliced mushrooms and turn the heat on to medium. Cook the sauce a minute or two while stirring to bring the sauce together with the mushrooms.
- Serve immediately or chill in the refrigerator up to a week and reheat when ready to use.
