- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2 cooked chicken breasts, thinly sliced and cut into 1-inch pieces
- ¼ teaspoon paprika
- ¼ teaspoon ground pepper
- ¼ teaspoon coarse salt
- 4 tablespoons olive oil, divided
- 1 small onion, sliced
- 2 cups shredded carrot
- ½ cup chopped radicchio
- ½ cup chopped endive
- ¼ cup chopped parsley
- 1 lemon, juiced
- 1 tablespoon white wine vinegar
- 2 teaspoons honey
- ¼ teaspoon sea salt
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground cumin

A healthy handful or two of shredded carrot is the star of the show in this salad to go along with our vitamin d rich sliced button mushrooms, lean protein sliced chicken breast, and filling endive and radicchio. Seasoned with a sweet and savory honey and lemon dressing, and you’ve got a salad that’s perfect for starting off the new year in a healthy and tasty direction!
DIRECTIONS:
- Put the FunGuy mushrooms in a mixing bowl along with the sliced chicken breast and season it with the paprika, ground pepper, coarse salt, and half of the olive oil. Toss well to coat the mushrooms and chicken with the seasoning.
- Heat a sauté pan over medium-high heat. Once the pan is hot add the seasoned mushrooms and chicken to the pan and sauté 6-7 minutes or until the mushrooms are browned and the chicken has been heated through. Turn off the heat and cover while assembling the salad.
- In another mixing bowl, mix the onion, shredded carrot, radicchi, endive, and parsley together. In a small bowl whisk the lemon juice, vinegar, honey, sea salt, cinnamon, cumin, and remaining olive oil together until well combined. Taste the dressing and adjust the salt and honey to preference.
- Pour the dressing over the carrot mixture and toss well before plating and topping with the sautéed mushrooms and chicken.
- Serve immediately, or keep the mushrooms and chicken separate from the mixed vegetables with dressing until ready to serve.
