- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 1 cantaloupe
- 2 medium cucumbers
- 1 medium red onion
- ½ cup blueberries
- 2 cups arugula
- ¼ cup lemon juice
- 4 tablespoons olive oil
- 2 tablespoons honey
- 2 sprigs of mint
- salt and black pepper to taste
Fun fact: Did you know that cantaloupes are actually a type of berry? Cucumbers too!
Mushrooms, however, are not berries. But they are still our favorite FunGuy!
This salad brings together both “berry” and FunGuy to make a refreshing and light summery salad of cool cucumber, sweet cantaloupe, and ripe blueberries mixed with a handful of peppery arugula and fresh raw mushrooms.
We’ve included a sweet honey and lemon vinaigrette dressing to finish this berry good FunGuy salad!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth, trim the stems and slice very thinly. Cut the cantaloupe in half, scoop out the seeds, and cut off the rind. Cut the cantaloupe into ½ inch thick slices. Peel and slice the onion and wash the blueberries thoroughly. Transfer to a large bowl, except for the cantaloupe. Wash and drain the arugula and add it to the bowl.
- In another small bowl, whisk the lemon juice, olive oil, and honey together. Season with salt to taste and pour ¾ of the vinaigrette over the salad ingredients in the bowl and toss well. Remove the stems from the mint and roughly chop the leaves on a cutting board, and add it to the salad, and toss again. Taste and add salt and pepper if necessary.
- Divide the salad among 4 dishes and top with cantaloupe slices before serving.
