- Ingredients:
- 8oz package of FunGuy crimini mushrooms
- 8oz broccolini
- 4 cloves garlic
- 3 tablespoons olive oil, divided
- 15 oz can cannellini beans, drained and rinsed
- ¼ cup white wine
- coarse salt
They say beans stalk but we cannellini hear how tasty they are in this FunGuy recipe!
FunGuy’s crimini mushrooms, a small bunch of tender broccolini, and a single can of cannellini beans come together quickly to make this modest but deliciously healthy dish. This easily be served with anything from roast chicken to grilled steak, or served as a standalone one-pan meal!
DIRECTIONS:
- Brush off any debris from the FunGuy crimini mushrooms with a damp cloth, trim the stems before slicing, and set aside. Rinse the broccolini under cold water, trim the ends, and set aside. Peel and mince the garlic cloves.
- Heat half of the olive oil in a sauté pan over medium-high heat. Once the oil is hot, add the garlic and sauté 1 minute. Add the cannellini beans to the pan. Stirring frequently, let the beans cook 2-3 minutes, or until browned slightly and softened, but not turn to mush. Transfer the beans to a bowl and set aside.
- Pour half of the white wine into the pan and gently scrape any crispy bits off of the bottom of the pan with a wooden spoon. Once the wine has evaporated, add the rest of the olive oil to the pan and add the crimini mushrooms and sauté one minute. Add the broccolini and the rest of the wine to the pan, letting them cook 3-4 more minutes, or until the wine has evaporated and the broccolini is a vibrant green color, but tender. Return the white beans to the mushrooms and broccolini and stir, allowing the beans to heat through. Turn off the heat.
- Serve immediately.
