• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 small onion
  • 4 garlic cloves
  • 4-6 tablespoons olive oil, divided
  • 2 teaspoons Italian seasoning
  • 8oz ball mozzarella, drained
  • ½ teaspoon coarse salt
  • 10-12 cherry tomatoes
  • ½ cup sliced green olives
  • fresh flat leaf parsley
  • 1 baguette loaf or rustic bread

This simple but delicious baked mozzarella is covered in bursting ripe cherry tomatoes, salty green olives, and crispy pan fried garlic, onions, and button mushrooms in warm herb seasoned olive oil.

Make sure to serve with plenty of thick crusty bread to sop it all up until the dish is clean! 

DIRECTIONS:

  1. Preheat oven to 375F. 
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the stems. Slice the mushrooms very thinly and set aside. Peel and thinly slice the onion and garlic cloves. Rinse the cherry tomatoes under cool water and set aside. 
  3. Heat 2 tablespoons of the olive oil in a sauté pan over medium heat. Separate the onion layers and add them to the pan and allow them to fry in the oil for 1 minute. Add the garlic slices, also separated from each other, and allow to fry another 3-4 minutes, watching carefully so they do no burn. Transfer the fried garlic and onion to a plate lined with paper towels to drain. Do not discard the oil. 
  4. Add the remaining oil to the pan and let it heat up; about 1 minute. Add the mushroom slices to the pan with the oil, along with the Italian seasoning, and allow the mushrooms to cook 3-5 minutes or until browned around the edges. Transfer the cooked mushrooms to the plate with the onion and garlic, reserving the seasoned oil.
  5. Place the mozzarella ball in the center of an oven safe baking dish and add the tomatoes and olives to the dish. Add the mushrooms, onions, and garlic to the baking dish and pour the reserved oil over the cheese and tomatoes in the dish. Season everything with the salt and place the dish in the oven to bake for 10-15 minutes, or until the mozzarella has become warm and gooey. 
  6. While the mozzarella and mushrooms bake, slice the bread on a cutting board. 
  7. Once the mozzarella has finished baking, remove the dish from the oven and allow to cool 5-10 minutes before serving with the sliced bread and fresh parsley.
