- Ingredients:
- 8oz dry penne pasta
- 1 teaspoon chili powder
- 1/8 teaspoon garlic powder
- 1/8 teaspoon dried oregano
- ¼ teaspoon paprika
- ½ teaspoon ground cumin
- 1 pinch red pepper flakes
- ½ teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons olive oil
- 8oz package of sliced FunGuy white button mushrooms
- 3 medium sized tomatoes, chopped
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1/3 cup shredded cheddar cheese
While the usual plain midweek pasta is a comforting go-to, the FunGuy has another plan for your noodles!
Give your penne a flavorful boost with a shake of fajita seasoning, crunchy vivid vegetables, and slices of meaty mushrooms instead of the usual sauce. Oh, and don’t forget a sprinkle of cheddar cheese to help bring it all together.
Best of all? It’s all done in half an hour!
DIRECTIONS:
- Preheat oven to 350F.
- Bring a pot of water to boil over high heat. Add in the penne pasta and allow to boil for about 8 minutes or until tender. Drain off excess water pour into a large bowl.
- In a small bowl mix together chili powder, garlic powder, oregano, paprika, cumin, red pepper flakes, salt, and black pepper.
- Add the FunGuy mushrooms, bell pepper, tomatoes, and red onion to the bowl and drizzle the olive oil on top. Sprinkle half the seasoning on top and mix well to coat everything. Taste and add more seasoning to your liking.
- Pour the pasta into a large casserole dish and sprinkle the cheese on top.
- Place the casserole dish into the oven and allow to bake about 7 minutes, or until the cheese has melted.
- Remove the dish from the oven and allow to cool 5 minutes.
- Serve immediately either as is or with a dollop of sour cream, guacamole, or healthy spoonful of salsa!
