- Ingredients:
- 1 1/2 tablespoon olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon freshly cracked black pepper, divided
- ½ teaspoon garlic powder
- ¼ teaspoon coarse salt
- 8oz package of sliced FunGuy white button mushrooms
- 4 1 inch thick pork chops
- 1 medium onion, sliced
- flat leaf parsley
Don’t be a boar in the kitchen tonight. Instead be a FunGuy with these easy baked pepper and balsamic pork chops!
It’s complete hogwash that there’s no time for a healthy dinner with a recipe like this one at your finger tips. With a little over five minutes worth of active time involved, there’s plenty of time to root out a healthy side or two to add to the menu!
DIRECTIONS:
- Preheat oven to 400F.
- In a small bowl, whisk the olive oil, vinegar, black pepper, garlic powder, and salt together. Place the pork chops in a dish and add half of the marinade to them, turning the meat over in the marinade to coat each side. Let them sit in the marinade about 10 minutes.
- Spread a layer of the onion slices and the sliced FunGuy mushrooms on the bottom of a baking dish that is large enough for the pork chops to lay in before adding the pork chops on top in a single layer. Spread the rest of the onions and mushrooms on top of the meat and drizzle the rest of the marinade on top of everything.
- Bake the pork chops in the oven for 15-20 minutes. The pork chops are done when they reach an internal temperature of 145F.
- Remove the pork chops from the oven and allow to cool 5 minutes before serving.
