- Ingredients:
- 10oz packages of FunGuy Mushroom Stuffers
- 2 tablespoons olive oil
- 1 small onion, diced
- 4 slices of thin sliced bacon, diced
- 3 cups baby spinach, chopped
- 1/3 cup shredded white cheddar cheese
- ½ teaspoon salt
- ½ teaspoon ground black pepper

We’ve put together a classic combo of bacon, spinach, and some cheesy cheddar and stuffed them into our stuffers just in time for your next summer soiree. So easy and delicious, we suggest double or even triple the recipe!
DIRECTIONS:
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Transfer the mushroom caps to the baking sheet.
- Heat olive oil in a sauté pan over medium high heat. Once the oil is hot add the onion and cook 1 minute. Add in the bacon and cook another 3-4 minutes, or until crisp. Stir in the spinach and cook until wilted; about 2-3 minutes. Transfer everything to a bowl.
- Add 2/3rds of the shredded cheddar, salt, and black pepper to the bowl with the bacon and spinach and mix well. Spoon the mixture into the mushroom caps and sprinkle the top with the remaining cheddar cheese.
- Bake the mushrooms in the oven for 15-17 minutes or until the cheese has browned on top and the mushrooms are cooked.
- Remove the mushrooms from the oven and allow to cool 5 minutes before serving.
