• Ingredients:
  • 1 tablespoon olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • Salt to taste
  • 2 eggs
  • 2 slices of bread, toasted
  • 1 avocado, mashed
  • 4oz sliced smoked salmon

A weekend breakfast of avocado toast can be so easy, but it’s oh so boring too.

Give your morning meal the FunGuy treatment with sautéed mushrooms, smoked salmon, and a poached egg on to. It only takes a couple extra minutes in the kitchen, and you have yourself a satisfying food option that can be easily be turned into a wow worthy brunch for everyone!

DIRECTIONS:

  1. Heat the olive oil in a pan over medium high heat. Add the FunGuy mushrooms and cook 3-4 minutes or until tender and lightly browned. Season with salt, stir, cover and turn off the heat.
  2. To poach the eggs, bring about 3 inches of water to a simmer in a pot and add in the vinegar.
  3. Break the egg into a small bowl and reduce the heat to low so that it’s hot but no longer simmering. Once the water is ready, stir the water with a spoon and drop the egg into the water and allow it to cook for 2-3 minutes, or until slightly firm on the outside but still soft on the inside. Use a slotted spoon to remove the egg and place it on a paper towel lined plate to drain of excess water. Repeat with the rest of the eggs.
  4. Lay the toasts on two plates and spread the mashed avocado on each toast. Layer the sautéed mushrooms, smoked salmon, and top with the poached egg.
  5. Serve immediately.
