- Ingredients:
- 2 avocados
- 2 large tomatoes or a pint of cherry tomatoes
- 1 lemon
- ½ teaspoon Italian seasoning
- coarse salt
- 1 long multigrain baguette or 2-3 long bread rolls
- 2-3 tablespoons olive oil
- 8oz package of sliced FunGuy white button mushrooms
A quick and healthy FunGuy snack is just 15 minutes away with this easy recipe for bruschetta!
This particular recipe combines two popular toasted bread recipes; avocado toast and tomato dressed bruschetta that is then topped with large slices of browned FunGuy mushrooms. It’s a blend of flavors that make the perfect two-bite sized savory treat!
DIRECTIONS:
- Lay the bread on a cutting board and cut it on a slight angle into ½ inch thick slices.
- Heat 2 tablespoons of olive oil in a grill pan over medium-high heat. Lay the bread slices into the pan and grill until toasted lightly, then turn and toast the other side. Transfer the toasted bread to a plate to cool.
- Cut open the avocados and scoop the flesh into a bowl. Cut the lemon in half and squeeze the juice of one half into the bowl, and mash it well with a fork. Taste and season with salt as necessary.
- Finely dice the tomatoes, transfer it to a bowl, squeeze the juice of the other half of the lemon over the tomatoes and season with the Italian seasoning and salt as necessary and mix well.
- Reduce the heat to medium and add a little more olive oil if needed. Toss the sliced FunGuy mushrooms into the pan in a single layer and let them grill 3-5 minutes, turning half way through. Season with a sprinkle of salt and turn off the heat.
- Spread the avocado on each slice of bread, then a layer of the tomato, and top with a slice of mushroom or two and serve immediately.
