- Ingredients:
- 4 eggs
- 3 tablespoons milk, divided
- 2 pinches of coarse salt
- 1½ tablespoons fresh chopped chives, divided
- 2 tablespoons olive oil, divided
- 2 tablespoons butter, divided
- 8oz package of sliced FunGuy white button mushrooms
- 1/3 cup shredded aged white cheddar cheese
When breakfast is considered to be the most important meal of the day, then it’s imperative to make sure to cheese the day the FunGuy way!
This recipe for a simple and intensely cheddar flavored mushroom omelette for two will do just that in no time flat, and is guaranteed to be a breakfast of champignons!
DIRECTIONS:
- Crack 2 eggs into a bowl and add half of the milk, half of the chive, and a pinch of salt. Beat the eggs with a fork until light in color and frothy.
- Heat half of the olive oil and butter in a saute pan over medium-heat. Add the FunGuy mushrooms to the pan and saute for 4-5 minutes. Transfer 2/3 of the mushrooms out of the pan to a bowl and cover to keep warm.
- Pour the beaten eggs into the pan and reduce the heat to medium-low, cooking them until the bottom has gotten firm but the top is still runny. Sprinkle some of the cheese and a few mushroom pieces down the middle of the omelette. Fold the edges over the middle and carefully flip to finish cooking. Transfer the omelette to a plate.
- Crack the other two eggs into the bowl, add the rest of the milk, chives, and salt and whisk until light and frothy.
- Heat the rest of the butter and olive oil in the saute pan and add mushrooms to the pan before pouring the eggs on top and repeating like with the first omelette. Once cooked, transfer to another plate.
- Sprinkle the top of each omelette with the rest of the shredded cheese and sauteed mushrooms.
- Serve immediately.
