- 8oz package of sliced FunGuy white button mushrooms
- 3 medium zucchini, thinly sliced into ribbons
- ¼ cup shredded carrots
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 2 teaspoons grated fresh ginger
- 2 tablespoons honey
- ¼ cup sesame oil
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 2 tablespoons peanuts
What says summer is right around the corner better than a fresh salad? How about a FunGuy fresh salad full of summer zucchini, Asian dressing and crunchy peanuts!
This recipe calls for time to marinate so it can be made ahead of time while the rest of that barbecue gets started. It’s even better when you let it sit to allow the flavors to really develop.
DIRECTIONS:
- Place FunGuy mushrooms, zucchini, carrots and onion into a large bowl and set aside.
- In another bowl add in garlic, ginger, honey, sesame oil, rice wine vinegar and soy sauce. Whisk together and taste. Add more honey, soy or vinegar if needed.
- Pour the dressing over the mushrooms and zucchini and toss to coat. Cover the bowl and refrigerate for at least 20 minutes or until ready to serve.
- This can be made a day ahead of time, but after that the vegetables can get a bit soggy!
