• Ingredients:
  • 8 ounces tricolored rotini pasta
  • 3 oz sundried tomatoes
  • 3 garlic cloves
  • ¼ cup walnut halves
  • 1 cup fresh basil leaves
  • 1 lemon, juiced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • 1/3 cup freshly grated Parmesan
  • 6 boneless skinless chicken cutlets
  • 8oz package of sliced FunGuy white button mushrooms
  • Flat leaf parsley, roughly chopped
  • Freshly grated Parmesan

Trying to cling to the taste of summer but craving some comforting fall flavor? You can have both with a bowl of body warming pasta, FunGuy mushrooms and juicy chicken tossed with pesto.

Not just any pesto, but one made from the ingredients of sunnier days like tomatoes, basil, and a hint of lemon.

It’s just the dish to help you flow from one season to the next!

DIRECTIONS:

  1. Bring a pot of salted water to a boil on the stove over high heat. Add in the rotini pasta and allow to cook 8-10 minutes or until cooked through.
  2. While the pasta cooks prepare the pesto, chicken and mushrooms.
  3. In a food processor or blender combine the tomatoes, garlic, walnuts, basil, lemon juice, salt, pepper, olive oil and parmesan. Pulse until everything turns into a fine paste, scraping down the sides in between as necessary. If a food processor is unavailable, mince all the ingredients on a cutting board, drizzle olive oil on top and mince together again until a paste forms.
  4. Spread a little bit of the pesto on each of the cutlets and lay them in a hot sauté pan over medium high heat. Allow each side to cook 3-5 minutes or until browned and cooked through. Toss in the FunGuy mushrooms and add in an additional spoonful of pesto and cook an additional 2-3 minutes, stirring frequently.
  5. Drain the pasta of any excess water and transfer it to a large bowl. Add the rest of the pesto and the mushrooms to the bowl and stir to combine and coat the pasta with the pesto.
  6. On a cutting board, slice each chicken cutlet before placing on top of each plate of pasta along with a bit of parsley and additional parmesan on top.
  7. Serve immediately.
