- Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8oz package of sliced FunGuy white button mushrooms
- 3 cups baby spinach, washed well and stems trimmed
- 1 cup feta cheese, crumbled
- 1 cup ricotta
- 1 egg, beaten
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 sheet puff pastry
- 3 tablespoons butter, melted
Lighten up your party Funguy style with a tray of flaky spanakopita puffs!
Just one bite of these little Greek pastries stuffed with a creamy mixture of feta cheese, spinach, and sliced mushrooms and everyone will be a going back for seconds.
Don’t worry; no one will even realize that they are healthy too!
DIRECTIONS:
- Preheat the oven to 350F.
- Heat the olive oil in a large skillet over medium heat. Add the onions and garlic to the pan and cook 2 minutes. Toss in the mushrooms and sauté 4-5 minutes. Add in the spinach and allow it to wilt, stirring occasionally.
- In a bowl, mix together feta, ricotta, egg, salt and pepper. Add the mushroom and spinach mixture to the bowl and stir well to combine.
- Lay the puff pastry sheet on a baking tray lined with baking paper. Cut the pastry into 12 squares and spoon the filling onto one half each square, leaving a small amount of room around the edge. Fold the empty half of the pastry square over the filling and seal the edges using the tines of a fork to press them closed. Poke small holes in the top of each filled pastry to let steam escape.
- Brush the tops of the pastry with butter before placing the tray into the oven to bake for 18-22 minutes or until browned on top.
- Remove the spanakopita puffs from the oven and allow them to cool 5-10 minutes before serving.
