- Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 1 stalk celery, chopped
- 8oz package of sliced FunGuy white button mushrooms
- 3 large tomatoes, diced
- 1 can crushed tomatoes
- 1 teaspoon thyme
- 1 teaspoon oregano
- 6 cups vegetable broth
- 1 14 ounce can black beans, rinsed and drained
- 1 cup of your favorite short pasta for soup
- Pinch of salt
- Black pepper to taste
- Fresh basil leaves
- Freshly grated parmesan cheese
Long cold, rainy or just blah days always call for something souper! So why not warm up with a big bowl of minestrone soup?
This version is made with an abundance of veggies, loads of FunGuy mushrooms and a good dose of beans and pasta. It’s sure to not only be healthy, but hearty and perfect for any day that needs a comforting pick me up!
DIRECTIONS:
- Heat olive oil in a large soup pot over medium heat. Add in the onion and garlic and let cook 2-3 minutes or until the onion is translucent. Add in the chopped carrots and celery and allow to cook 4-5 minutes or until the carrots have just softened. Toss in the FunGuy mushrooms, stirring to combine. Let the mushrooms cook 2-3 minutes before stirring in the diced tomatoes, crushed tomatoes, thyme, and oregano. Pour the vegetable broth into the pot and stir well. Cover with a lid and bring the pot to a boil.
- Once the pot has come to a boil, reduce the heat to medium low and allow it to simmer 15- 20 minutes. Stir in the black beans and pasta and allow it to cook another 10 minutes. Season the soup with salt and black pepper.
- Serve hot with a couple of fresh basil leaves and a sprinkle of fresh parmesan.
