- Ingredients:
- 2 tablespoons olive oil
- 1 red onion, thinly sliced
- 1 potato, grated
- 8oz package of sliced FunGuy white button mushrooms
- 4 eggs
- ½ cup milk
- 1 hot yellow pepper, sliced
- 1 tomato, diced
- 2 tablespoons fresh cilantro, roughly chopped
- Pinch of salt
Omelettes are a go to for breakfast, but why do the same old folded over egg and cheese variety?
This weekend wake yourself up with a spicy Spanish omelette instead. One full of FunGuy mushrooms, fried potato, juicy tomato, fresh cilantro, with a hot yellow pepper tossed in for good measure. You know, just to make sure you’re awake and ready for the day.
Your taste buds will be sure to say “Olé!”
DIRECTIONS:
- Heat olive oil in a skillet over medium high heat. Once hot add in half of the onion and half of the pepper, sautéing for 1-2 minutes. Next add in the potato and continue to cook until the potato is browned, about 5-7 minutes.
- Pour the egg into the pan over the potato and onion and season with salt, stir gently just to help the egg spread about the pan. Reduce the heat to low and sprinkle the tomato, half of the cilantro, rest of the onion and mushrooms around the top. Cover with a lid and allow to cook about 7-10 minutes or until the top is just done. Check it often.
- Once the top is done, gently run a rubber spatula around the edge to release the omelette from the edges of the pan before transferring it to a large serving plate.
- Serve immediately with the rest of the cilantro on top.
