- Ingredients:
- Salt and water for boiling
- 1 package (16oz) whole wheat spaghetti
- 8oz package of sliced FunGuy white button mushrooms
- 1 lemon, zested and juiced
- 1 teaspoon freshly ground black pepper
- 1 pound boneless skinless chicken breast, cut into strips
- 2 tablespoons olive oil
- 3 cloves of garlic, minced
- 1 large tomato, diced
- Salt and Pepper to taste
- Fresh cilantro, chopped
Not many combos go together better than lemon and pepper. The tang and zest of the two snaps bored taste buds right to attention! Just toss in some juicy chicken, ripe tomatoes and FunGuy mushrooms and you’ve got yourself a dish full of flavor longing to be whirled up onto a fork with some spaghetti noodles. What are you waiting for? Get your FunGuy on with some zingy flavors and spaghetti slurping!
DIRECTIONS:
- Bring a pot of salted water to boil on the stove and add pasta. Allow to cook 8-9 minutes or until cooked through. Drain of excess water.
- While the spaghetti is cooking prepare the mushrooms and chicken.
- In a bowl mix together the chicken, black pepper, half of the lemon juice and half of the zest.
- Heat olive oil in a sauté pan over medium high heat. Add in the garlic and cook 1 minute. Next add in the chicken and sauté 5-6 minutes or until lightly browned. Toss in the FunGuy mushrooms and cook, stirring often another 4-5 minutes, or until the chicken is cooked through.
- Once the chicken and mushrooms are cooked through, toss in the tomato and stir together and continue to cook for an additional minute. Remove from heat.
- Toss the spaghetti into the sauté pan and mix to combine. Season the spaghetti with salt, pepper, the rest of the lemon zest, and cilantro. Toss everything together again then serve immediately.
