- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 1 pound flank steak, skirt or hanger steak
- 1/2 cup balsamic vinegar, divided
- 3 tablespoons olive oil
- 1 teaspoon coarse salt
- ½ teaspoon black pepper
- 2 sprigs fresh thyme
- 2 cloves garlic, minced
- 2 tomatoes, cut into wedges
- 1 large onion, sliced
- Salt to taste

Sweet, tangy balsamic and thyme marinated flank steak grilled with sliced FunGuy mushrooms, tomatoes and onions goes well with everything from fresh summer greens to creamy potato salad.
Think of it as summer on a plate!
DIRECTIONS:
- For the marinade, place all but 2 tablespoons of the balsamic vinegar, olive oil, coarse salt, black pepper, thyme and garlic into a plastic zip bag or a deep glass or plastic bowl. Add the steak to the marinade. Place in the refrigerator to marinate for at least 3 hours and up to 24 hours, turning it occasionally in the marinade to get everything well-seasoned.
- When ready to cook, prepare the grill by lightly oiling it with a paper towel and set the temperature to high.
- Remove the steak from the marinade and drain off any excess liquid and pat dry with paper towels. Discard the rest of the marinade.
- Place the FunGuy mushrooms, onions, and tomato wedges into a bowl with a sprinkle of salt and the 2 tablespoons of balsamic vinegar. Toss to coat everything and set aside.
- Once the grill is hot, place the steak on the grill and cook about 7-8 minutes, flipping half way through so that the outside is seared and the inside is cooked to 130F for medium-rare. Cook longer for more done, and less for a rarer steak.
- Transfer the steak to a cutting board, take a piece of tin foil and tent it over the steak, and allow it to rest for 10 minutes.
- While waiting for the steak to rest, reduce the heat of the grill to medium and throw the mushrooms, tomatoes and onions onto a grill grate and then onto the hot grill. Allow them to cook 3-4 minutes turning half way.
- Carefully slice the steak into thin strips, cutting against the grain and place it on a plate. Add the mushrooms, tomatoes and onions on top and serve immediately!
