- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 1 16oz can chickpeas, drained and rinsed
- 1 16oz can black beans, drained and rinsed
- 1 pint cherry tomatoes, cut in half
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 tablespoons olive oil
- Pinch of course salt
- ¼ teaspoon ground cumin
- 1 sprig fresh lemon thyme
- 1 sprig fresh oregano
The summer sun is threatening to make anyone regret cooking anything on that stove top, let alone put anything warm in your belly. Luckily the FunGuy is here to make it all better with this cold black bean and chickpea salad tossed with cherry tomatoes and a simple herbed vinaigrette.
With no cooking needed, it’ll help keep that sweltering heat outside where it belongs all summer long!
DIRECTIONS:
- Combine FunGuy mushrooms, chickpeas, black beans and cherry tomatoes in a large bowl. In another bow whisk together lemon juice, olive oil, garlic, salt and cumin. Pour the dressing over the beans and mushrooms and toss to coat.
- Remove the leaves from the stems of the thyme and oregano. Place the herbs on a cutting board and roughly chop before adding them to the bowl with the beans and mushrooms and toss once more before serving.
This can be served immediately or made ahead of time and refrigerated until ready to eat.
