- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 2 (4 oz) salmon filets
- ½ tablespoon paprika
- ½ teaspoon cayenne
- ½ teaspoon black pepper
- 1 teaspoon oregano
- 1 teaspoon thyme
- ½ teaspoon coarse salt
- 3 tablespoons olive oil, divided
- 2 cups cooked white rice
Put something red hot on the menu this year for that special valentine!
The FunGuy has just what you need with this blackened salmon filet on a bed of white rice and spicy mushrooms.
Just be sure to have something cool, creamy, and sweet waiting for your Valentine’s Day dessert!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth, trim the ends and cut them into quarters. Set aside.
- Mix the paprika, cayenne, pepper, oregano, thyme and salt in a large shallow bowl. Place the salmon in the spice mixture and coat both sides.
- Heat half of the olive oil in a skillet on medium heat. Once the oil is hot, carefully lay the salmon in the pan and cook 4-5 minutes on each side. Salmon is done with the flesh flakes.
- Spoon the white rice onto plates while the salmon cooks. Once the salmon is done, transfer it to the rice and cover with tented aluminum foil to keep warm.
- Add the mushrooms to the pan along with the rest of the spice mixture and the rest of the olive oil. Toss with a spoon to coat the mushrooms. Cook the mushrooms, stirring frequently, for 4-5 minutes.
- Top the salmon with the mushrooms and serve immediately.
