- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 1 stale baguette, cut or broken into about 1 inch pieces
- 1 ½ cups milk
- 1 onion, chopped
- 1 carrot, chopped
- 3 tablespoons butter
- 3 cups chopped beet greens, stems included but separated
- 4 eggs
- 1 teaspoon dried thyme
- Salt and pepper to taste
- ½ cup shredded white cheddar cheese
This season mac and cheese are out and strata is in for the new go-to comfort food!
A dish that is perfect for that stale loaf of bread that’s been seen better days, you know, like yesterday or the day before. Just simply soak it in some milk and add in some sautéed FunGuy mushrooms along with some of autumn’s favorite vegetables. Sprinkle a handful or two of cheddar on top and bake until it’s warm and crispy brown on top.
Now that’s some good comfort food.
DIRECTIONS:
- Preheat the oven to 350F.
- Place the bread in a large bowl and pour half of the milk over it. Toss to get all the bread wet and set aside.
- Heat butter in a sauté pan over medium heat. Add in the FunGuy Mushrooms, onion, carrot, and beet green stems. Sauté until the mushrooms have browned and the onion is translucent. Toss the beet greens into the pan and sauté an additional 2 minutes or until the leaves have wilted.
- Remove the vegetables from the heat and add them to the bowl with the bread and toss to combine. Pour the bread and mushrooms into a baking dish.
- Beat eggs and thyme with the rest of the milk in a bowl and pour over the bread. Season the strata with salt and pepper. Sprinkle cheese on top.
- Bake uncovered for 40-50 minutes or until the top of the bread is browned and crisp.
- Serve immediately.
