- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 1 head of cauliflower
- 1 red onion
- 6 garlic cloves
- 1 cup watercress
- 3 tablespoons olive oil
- 1 tablespoon curry powder
- 1 tablespoon paprika
- 1 teaspoon coarse salt
- ½ cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon garlic paste
- salt to taste
- black pepper to taste
The cool nip of autumn is in the air making it the perfect time to fire up the oven and roast up some veggies with the FunGuy!
This simple side recipe of roasted cauliflower and our button mushrooms is perfect to get going while you focus on more consuming tasks like the main dish. Just a little rinse, chop, and a good bit of seasoning, and it’s ready to go in the oven!
We suggest serving with a juicy chicken, tender steak, or even your favorite stuffed pasta!
DIRECTIONS:
- Preheat oven to 375F and prepare a large baking dish.
- Thoroughly wash the cauliflower and remove any leaves before breaking the cauliflower into bite sized florets. Peel the onion and garlic before slicing the onion and mincing the garlic. Rinse the water cress under cool water and remove any big stems and set aside for later.
- Transfer everything, except the watercress, to a large mixing bowl. Drizzle the olive oil over the vegetables and season with the curry powder, paprika, and salt and toss well to coat. Transfer the cauliflower and mushroom mixture to the baking dish and roast in the oven for 20-25 minutes or until the cauliflower has cooked through.
- While the cauliflower and mushrooms cook, prepare the yogurt garlic sauce by mixing the yogurt, lemon juice, and garlic paste together in a bowl. Taste and season with salt and pepper as necessary. Cover and set aside.
- When the cauliflower and mushrooms have almost finished cooking, remove the baking dish and add the water cress to the dish, stirring it well and seasoning with a pinch of salt. Return the dish to the oven to cook for approximately 5 more minutes, or until the watercress has wilted.
- Remove the dish from the oven and allow to cool 5 minutes before serving with the garlic yogurt sauce drizzled on top!
