- 8 ounces large elbow macaroni pasta
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- ½ cup tomato sauce
- 2 cans (3.75oz) of sardines, drained of excess oil
- fresh parsley
Ah glorious spring has finally sprung. After blizzards, freezing temps and polar vortexes it’s time to whip out some lighter FunGuy fare!
Oh, it’s still a bit nippy? Then how about something lighter but still comforting like this healthy sardine and mushroom tomato sauce over pasta!
DIRECTIONS:
- Bring a pot of salted water to a boil on the stove and add in the macaroni pasta. Allow to cook 8-10 minutes or until just cooked through.
- While the pasta cooks, heat olive oil in a pan over medium high heat. Add in the onion and garlic, sautéing for 2 minutes or until lightly browned. Add in the FunGuy mushrooms an saute for another 3-5 minutes.
- Add the sardines to the mushrooms and break them apart with a spatula. Add in the tomato sauce and stir to combine. Reduce the heat to medium low and allow to simmer until the pasta is done.
- Drain the pasta of water.
- Serve pasta hot with sardines and mushrooms and a sprinkle of fresh parsley on top!
