- Ingredients:
- 2 tablespoons olive oil
- 2 cloves of garlic, thinly sliced
- 8oz package of sliced FunGuy white button mushrooms
- 1 teaspoon fresh oregano leaves, minced
- 4-5 sundried tomatoes, chopped
- 1 medium onion, thinly sliced
- 1 tablespoon white wine vinegar
- 2 tablespoons olive oil
- 1oz feta cheese
- Salt and black pepper
Don’t have any fresh leafy greens for today’s salad? No worries! FunGuy has a delicious mushroom filled salad that doesn’t need the extra leaves to carry it.
Toss some lightly cooked sliced FunGuy mushrooms with sweet sundried tomatoes, fresh herbs, a simple vinaigrette and then top it off with the ultimate way to eat garlic; fried.
This salad is a tasty side as is, but if a few greens are a must, it can be added to your garden salad too!
DIRECTIONS:
- Heat the olive oil in a sauté pan over medium heat. Add the sliced garlic to the pan in a single layer. Allow the garlic to fry 1-2 minutes on each side, or until golden brown. Be sure to keep an eye on the garlic while cooking so it doesn’t burn. Transfer the cooked garlic to a paper towel lined plate to drain of excess oil.
- Turn the heat up under the pan to medium high heat and add in the FunGuy mushrooms. Let the mushrooms cook 2-4 minutes or until just tender. Transfer the cooked mushrooms to a bowl.
- Add the oregano, sundried tomatoes, onion, vinegar, and extra olive oil to the bowl of mushrooms. Toss well to combine.
- Place the mushroom salad on a serving plate. Break the feta cheese up over the salad and season with salt and pepper to taste. Lastly add the fried garlic on top of the salad just before serving.
- Serve immediately or at room temperature.
