- Ingredients:
- 10 oz package of FunGuy Mushroom Stuffers
- 1 clove garlic, minced
- ½ small onion, minced
- 1 tablespoon olive oil
- 1 cup tomato sauce
- Pinch salt and black pepper
- 4-5 cherry tomatoes, thinly sliced
- 1 ball mozzarella, sliced
- Fresh basil leaves
When you want a pizza fit for a royalty, there’s only one way to go; Pizza Margherita! But what do you do if you just want a taste, a bite, a mouthful of that simple Italian classic?
Toss out the dough and shrink it all down of course! A spoonful of homemade sauce, a touch of mozzarella, a tiny slice of tomato then stuff it all into a FunGuy mushroom of course!
DIRECTIONS:
- Preheat oven to 350F.
- Brush off any debris from the FunGuy mushrooms with a damp towel. Pop out the stems and discard. Place the mushrooms on a parchment lined baking sheet with the hole side up.
- Heat the olive oil in a small sauce pan over medium high heat. Add in the garlic and onions and sauté 2 minutes. Pour in the tomato sauce and stir well to combine. Reduce the heat to medium low and allow to simmer, stirring frequently, about 10 minutes or until it’s thickened a bit. Season the sauce with a pinch of salt and black pepper to taste then turn off the heat.
- Spoon a little sauce into each mushroom cap. Cut the mozzarella slices into small circles and place enough to almost cover the top of each mushroom. Add a slice of cherry tomato to each mushroom.
- Place the mushrooms into the oven and bake them for 15-18 minutes or until the mushrooms are tender and the cheese has melted. Remove the mushrooms from the oven and top each with a basil leaf.
- Serve immediately.
