- Ingredients:
- 4 turkey breast cutlets
- 1 lime, cut in half
- salt
- ground pepper
- 8oz package of sliced FunGuy white button mushrooms
- 1 tablespoon olive oil
- 1 onion, sliced into rings
- 1 bell pepper thinly sliced
- 2 tomatoes, sliced
- butter
- 4 bread rolls
The season for grilling is coming to an end, but there is at least one more big summer hootenanny on the horizon, Labor Day!
Don’t do barbecue chicken and hamburgers (unless it’s one of our FunGuy burgers of course!). Go for something different. Go for the gobble gobble of turkey!
A grilled turkey sandwich with grilled onions and bell peppers is sure to satisfy. Especially when laden with all that smoky, savory taste of grilled FunGuy mushrooms.
Not only will your friends and family appreciate the unique choice, but so will those cows and chickens that won’t be on your grill this year.
DIRECTIONS:
- Prep the grill, start the fire and allow it to get nice and hot.
- Lightly season both sides of the turkey with salt, pepper and squeeze lime juice on top.
- Once the grill is hot, lay the turkey on the grill and allow to cook 2-4 minutes each side or until no longer pink. Remove the turkey and allow it to rest while grilling the vegetables and mushrooms.
- While the turkey is resting, brush the sliced FunGuy mushrooms with olive oil and lay them on a narrow grate grill rack, grill pan or slide them onto metal skewers.
- Place the onion slices, bell pepper slices and mushrooms on the grill and allow them to cook for 2-3 minutes or until char marks appear. Turn over and allow to grill a minute longer. Transfer grilled onion, pepper and mushrooms to a bowl and season lightly with salt. Toss to coat everything evenly.
- Cut each bread roll in half and spread butter on the inside. Place each half on the grill and allow to grill 1-2 minutes or until grill marks show and bread is lightly toasted.
- On a cutting board, cut the turkey into thin strips.
- Assemble sandwiches by layering lettuce, sliced turkey, tomato, bell pepper, onion and mushrooms.
- Cut each finished sandwich in half and serve with plenty of napkins!
