This FunGuy version isn’t just healthy and flavorful it’s also vegetarian friendly!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth, then trim the ends then cut them into quarters.
- Put the rice into a strainer and rinse it thoroughly. Allow to drain.
- Heat olive oil in a pot over medium low heat. Add in the onions, garlic, mushrooms and pepper and sauté until onions are soft. Add in the cumin, oregano, allspice, black pepper, bay leaf and rice. Stir well to combine and coat the rice. Add in the black beans and stir again.
- Pour in the broth and water and stir well. Increase the heat to high and bring to a boil. Once boiling, cover and reduce to the heat to low and let simmer for 20-25 minutes or until the liquid has evaporated and the rice is cooked through.
- Discard the bay leaf, fluff the rice with a fork and add salt to taste.
- Serve hot with fresh cilantro on top.
Have a Fun meal!
