- Ingredients:
- 8oz package of whole FunGuy crimini mushrooms
- 5-6 cherry tomatoes
- 1 garlic clove
- ½ cup arugula
- 1 premade pie crust
- Flour for dusting
- ¼ cup plain Greek yogurt
- ¼ teaspoon coarse salt
- fresh ground black pepper
- ¼ cup shredded gouda cheese
- Olive oil or melted butter

While many galette recipes are for a sweet and fruity dessert, this one goes against tradition. As a healthy savory version, this recipe uses a base of creamy Greek yogurt, ripe cherry tomatoes, peppery arugula, and is loaded with slices of crimini mushrooms on a flaky golden brown pie crust.
It’s the perfect dinner galette to be followed with a traditional dessert one!
DIRECTIONS:
- Preheat oven to 400F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy crimini mushrooms with a damp cloth. Trim the ends and slice the mushrooms thinly. Wash the tomatoes and cut each into 4 lengthwise slices. Wash the arugula and shake off excess water. Peel and mince the garlic clove.
- Roll out the pie crust on a lightly floured surface to 1/8th inch thickness and transfer it to the baking sheet. Spread the yogurt in an even layer around the middle, leaving a 2-inch border around the edge of the pie crust. Pepper the surface of the yogurt covered part of the crust with the garlic and half of the salt.
- Lay the mushrooms around the pie crust in a single layer, making sure to leave that 2-inch border bare. Add the arugula and the tomato slices in a layer on top. Season with the rest of the salt and black pepper. Top with the gouda cheese.
- Fold the border in-wards and brush the boarder with olive oil or melted butter.
- Bake the galette in oven for 18-20 minutes, or until the crust is golden brown.
- Let the galette cool about 5 minutes before serving.
