- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2 carrots
- 4 cloves garlic
- 1 inch fresh ginger
- 1 tablespoon olive oil
- 1 red onion, sliced
- 4 cups vegetable broth, unsalted
- 2 cups water
- Salt to taste
- 1 bunch fresh watercress
- if desired add: rice noodles, soba noodles, or egg noodles
Feeling sluggish or just downright unhealthy? Clean up your act, be it for that New Year’s resolution, a nasty cold or a weekend of over indulgence with a simple delicious soup!
Slurping up a big bowl of this FunGuy broth and vegetables will get you on track to a happy and healthier you!
DIRECTIONS:
- Peel and cut carrots into matchstick sized sticks on a cutting board. Peel and slice the garlic and ginger.
- Heat olive oil in the bottom of a soup pot and add in the garlic and ginger, cooking for 1 minute. Add in the FunGuy mushrooms, carrots and red onion slices. Pour in the vegetable broth and water and stir to combine.
- Bring the soup to a boil, cover and reduce to medium low. Allow the soup to simmer 20-30 minutes. Taste the soup and season with salt as needed.
- 5 minutes before serving add in the watercress.
- Serve hot.
- Feel free to add rice noodles, soba noodles, or good old-fashioned egg noodles if desired!
