- Ingredients:
- 2 tablespoons olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 carrot, diced
- 8oz package of sliced FunGuy white button mushrooms
- 1 chicken, quartered
- 1 tablespoon dried parsley
- ½ tablespoon chopped fresh oregano
- ½ tablespoon fresh thyme
- ½ teaspoon salt
- 1 cup water
- ½ cup white wine
- 1 bay leaf
- 2 tablespoons capers
- 1/4 tablespoons butter
- 1 lemon
- salt

A chicken is all about embracing chicken’s inner FunGuy by not only using mushrooms in the main part of the dish, but also in the buttery caper sauce that will be drizzled over everything.
We suggest serving this with a bit of rice, mashed potatoes, or crusty bread so as not to waste any of that delicious sauce!
DIRECTIONS:
- Heat the olive oil in a skillet over medium high heat. Add the onion and garlic and saute 2 minutes. Add the carrot and cook another 3-4 minutes. Add half of the FunGuy mushrooms, parsley, oregano, and thyme to the pan and saute them until lightly browned.
- Place the chicken pieces into the pan, skin side down, and allow them to sear and brown 5-7 minutes. Turn the chicken over and pour in the wine. Allow the wine to cook down to half, stirring occasionally. Add the water and stir again. Cover the pan and allow the chicken to cook for 20-25 minutes or until cooked through.
- In another pan, melt the butter over medium heat. Add the rest of the mushrooms to the butter and saute them for 4-5 minutes. Add the capers and stir. Cut the lemon in half and squeeze the juice over the mushroom and capers sauce and stir once again. Turn off the heat, taste and season with salt if needed.
- Serve the chicken with the caper and mushroom sauce on top.
