- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2 large tomatoes, diced
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- 1 onion, thinly sliced
- 1 tablespoon olive oil
- 2 eggs
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons shredded cheddar cheese
Don’t have all your eggs in a basket? No problem! Just crack those eggs into a couple of dishes and bake up a delicious breakfast instead.
While you’re at it be sure to add diced fresh tomatoes, FunGuy mushrooms, a little garlic, and a sprinkle of cheese.
All that’ll be left to do is enjoy!
DIRECTIONS:
- Preheat the oven to 375F.
- Put the FunGuy mushrooms in a bowl and add the diced tomatoes, garlic, and oregano. Toss them together and place them in ramekins or bake safe dishes. Drizzle olive oil on top of the tomatoes and mushrooms.
- Crack an egg into each dish and season lightly with salt and black pepper. Separate the onion rings from each other and place on top.
- Place the dishes into the oven and allow them to bake 12-15 minutes for runny yolk and 18-20 minutes for hard yolks. 3 minutes before the eggs are done, remove the dishes from the oven, add the shredded cheese on top of the eggs and return them to the oven.
- Remove the dishes from the oven and serve immediately.
