- INGREDIENTS:
- 8 oz sliced white button FunGuy mushrooms
- 1 red onion, sliced
- 1 tablespoon butter
- 4 eggs, separated
- 8 egg whites
- pinch salt
- pinch pepper
- 1/3 cup shredded mozzarella cheese
- 1/4 cup baby spinach leaves
- 1 tablespoon olive oil
Every cook needs a recipe in their arsenal that can be used for any meal of the day.
This healthy Florentine frittata does just that! With spinach, cheese and lightly browned FunGuy mushrooms sautéed in just a bit of butter, it’s quick and perfect for breakfast, brunch, lunch, or dinner.
DIRECTIONS
- Turn on oven broiler.
- Melt butter in a skillet (one that can be placed in the oven) over medium high heat. Add in mushrooms and onion, sautéing until lightly browned. Remove from pan and set aside.
- Season egg whites with salt and pepper and beat with a fork until frothy.
- Reduce heat to medium low and pour in egg whites. Add mushroom, onion and ¼ cup mozzarella to the egg whites and gently stir with a wooden spoon to spread it evenly but not break the egg on the bottom.
- Place yolks into the egg whites and break with a fork to let the yolk ooze out into the white. Don’t stir.
- Sprinkle baby spinach leaves and mozzarella on top of the egg whites and allow to cook an additional 3-5 minutes or until egg is opaque.
- Place the entire skillet into the oven and allow to cook another 3-5 minutes or until cheese has melted and the top of the frittata has browned.
- Carefully remove the pan with the use of pot holders or a thick kitchen towel and allow to cool a minute before serving.
Experiment by adding a bit of cooked chicken breast or more vegetables such as diced tomatoes or bell peppers. Have a fun meal!
