- Ingredients:
- 2 tablespoons olive oil
- 8oz package of sliced FunGuy white button mushrooms
- 1 pound cooked and peeled shrimp
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt and black pepper to taste
- 2 ½ cups green leaf lettuce
- 2 ½ cups red leaf lettuce
- 1 loaf crusty day old bread
- 1 red onion
- 1 cucumber
- 1 small handful fresh cilantro or flat leaf parsley
This time of year is all about grilling burgers and barbecuing ribs, but it’s also the season for some lighter fare!
This mixture of garden greens, cool cucumber, and fresh red onion comes with cubes of day old crusty bread and a healthy dose of quick sautéed garlic lemon FunGuy mushrooms and shrimp to dress it.
This is the summer salad that will not only whet the appetite, it’s sure to satiate your hunger as well!
DIRECTIONS:
- Heat the olive oil in a large sauté pan over medium heat. Add the garlic and cook 1 minute, stirring frequently. Add the FunGuy mushrooms and cook 2 minutes. Lastly, add the shrimp and cook another 2 minutes to just bring all the flavors together and turn off the heat. Cut the lemon in half and squeeze the juice over the shrimp and mushrooms and season with salt and black pepper to taste. Toss with a spoon to coat everything evenly.
- Wash and pat dry the lettuce leaves. Break or cut them into bite sized pieces and place in a large bowl. Peel and slice the red onion and cucumber on a cutting board into thin slices and add them to the salad bowl. Lay the bread on the cutting board and cut it into 1 inch pieces and add to the bowl. Break the cilantro or parsley into the salad and toss to mix.
- Pour the shrimp and mushrooms over the salad and toss the salad again to coat everything with the seasoning.
- Divide into individual bowls or plates and serve immediately.
