• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 tablespoon olive oil
  • 1 large ripe avocado
  • ½ small lemon, juiced
  • 4 croissants
  • Pinch of salt
  • Fresh cilantro

While we all love a good crunchy toast with creamy avocado on top, any FunGuy will let you know that that’s not the only way to enjoy a healthy breakfast!

Change it up with a flaky, buttery, light croissant with a smear of ripe rich avocado and topped with our favourite food; FunGuy mushrooms!

DIRECTIONS:

  1. Heat the olive oil in a sauté pan over medium high heat. Add in the FunGuy mushrooms and sauté about 5 minutes, or until lightly browned. Once the mushrooms have cooked, toss in the cilantro and stir. Turn off the heat.
  2. While the mushrooms cook, prepare the avocado and croissants.
  3. Cut the avocado in half lengthwise and open it. With a spoon, remove the seed and scoop out the green flesh. Place the avocado in a bowl with the lemon juice and mash it well with a fork.
  4. Carefully cut the croissants in half sandwich style. Spread a quarter of the avocado on the bottom half and add mushrooms and a sprinkle of salt before placing the other half on top. Repeat with the rest of the avocado, croissants and mushrooms.
  5. Serve immediately.
