- Ingredients:
- 2 tablespoons butter
- 8oz package of sliced FunGuy white button mushrooms
- ¼ cup cream cheese, room temperature
- ½ teaspoon minced fresh dill
- ½ teaspoon minced fresh parsley
- ¼ teaspoon lemon zest
- 1 cucumber
- 16 slices of white bread

These cucumber tea sandwiches are made with butter sautéed FunGuy mushrooms and a quick lemon and dill cream cheese. Perfect little snack bites to go with warm or iced tea so they are the perfect accompaniment to your chic affair.
DIRECTIONS:
- Melt the butter in a sauté pan over medium low heat. Once the butter has melted, turn the heat up to medium and add the FunGuy mushrooms to the pan in a single layer, cooking them in batches if needed. Sauté the mushrooms until they are lightly browned, turning half way through cooking. Taste the mushrooms and season with salt and turn off the heat.
- In a small bowl mix together the cream cheese, dill, parsley, and lemon zest with a fork. Peel the cucumber and slice it thinly on a cutting board. Lay the bread out on the cutting board and trim off the crusts.
- Spread the herbed cream cheese on one side of each slice of bread. Lay the cucumber on each side and add a little dollop of cream cheese on top of each cucumber slice then place the cooked mushroom slices on top of each cucumber on one slice of bread. Turn the slice of bread without the mushrooms on top of the one with the mushrooms to sandwich it together. Cut the assembled sandwiches into quarters to make triangles.
- Serve the sandwiches immediately or chilled with warm or iced tea!
