- INGREDIENTS:
- 2 tablespoons butter
- 4 ounces FunGuy mushrooms, coarsely chopped
- ¼ teaspoon salt
- 2 cloves garlic, minced
- 2 tablespoons dry sherry
- ¼ cup whipping cream or half-and-half
- 15 frozen phyllo shells, thawed and warmed
- ¼ cup chopped fresh parsley

DIRECTIONS:
- Melt the butter in a large skillet over medium heat.
- Add mushrooms and salt. Cook for about three minutes, or until tender—be sure to move them around a little with a wooden spoon.
- Add the garlic, cook about 20 seconds, or until the garlic is fragrant.
- Add the sherry and stir it in.
- Stir in the cream; cook for about two minutes, or until the cream is thickened slightly.
- Remove from the heat.
- Gently fill the phyllo shells with the mushroom mixture.
- Sprinkle with the parsley. Serve immediately.
