- Ingredients:
- ½ cup balsamic vinegar
- ¼ cup olive oil
- 1 cup pearl onions, peeled
- 4 boneless skinless chicken breasts
- 1 cup cream
- ½ teaspoon salt
- ½ teaspoon black pepper
- 8oz package of whole FunGuy white button mushrooms
Make Sunday supper an easy task by whipping up this fantastic FunGuy chicken dish!
Soaking chicken breasts in a rich cream while pearl onions sit in a sweet balsamic marinade, make prep time simple and quick. Then just toss them into a dish with earthy mushrooms to roast! Add a few baked potatoes and some steamed veggies and you have a healthy, tasty family meal in an hour.
It’s easy enough that it may become a weeknight dinner idea too!
DIRECTIONS:
- Pour balsamic vinegar and olive oil into a bowl and whisk well. Add in the pearl onions, cover with plastic wrap and place them in the refrigerator to allow them to marinate for at least 20 minutes.
- Place the chicken breasts into a shallow dish in a single layer. Whisk the cream, salt and black pepper together and pour it over the chicken. Cover the chicken with plastic wrap and allow it to marinate 20-30 minutes.
- Preheat the oven to 375F.
- Remove the chicken and the onions from the refrigerator. Transfer the chicken to a large casserole dish and pour the left over cream over the top. Transfer the pearl onions to the casserole dish, leaving the marinade in the bowl.
- Clean the FunGuy mushrooms by brushing off any debris with a damp cloth, then trim the ends and add them to the balsamic and olive oil marinade. Toss to coat the mushrooms before transferring them to the dish with the chicken and pearl onions.
- Roast the chicken breasts, mushrooms and onions for 15-25 minutes in the oven. It’s done with the chicken’s juices run clear and the meat is no longer pink in the middle.
- Remove the chicken and mushrooms from the oven and allow it to cook 5 minutes before serving.
