- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2-3 tablespoons lemon juice, divided
- 1 tablespoon olive oil
- 1 cucumber, thinly sliced
- 1 medium-small onion, thinly sliced
- 1.5 oz feta cheese, crumbled
- 4-5 leaves fresh basil, roughly chopped
- 4 tablespoons plain Greek yogurt
- Salt and black pepper to taste
- 4 bread buns, cut in half horizontally
Keep it cool this summer with a simple, yet tasty, sandwich. Some good old mushrooms, a taste of lemon, crunchy cucumber, and a bite of salty feta and you’ve got the ultimate cool-as-a-cucumber sandwich in less than ten minutes.
Making extra mushroom filling is highly recommended, just in case you need an extra cool sandwich later too!
DIRECTIONS:
- Place the FunGuy mushrooms into a bowl and add half of the lemon juice and olive oil, tossing to coat the mushrooms well. Season them lightly with salt and freshly ground black pepper.
- Put the sliced cucumber and onion into another bowl and add in the rest of the lemon juice and set aside.
- Heat a sauté pan over medium high heat. Toss in the mushrooms and cook 4-5 minutes or until the mushrooms are lightly browned and tender. Turn off the heat.
- Drain any excess liquid from the cucumber and onion. Transfer the mushrooms to the bowl with the cucumber and onion. Add in the feta cheese and fresh basil and toss everything to combine.
- Separate the top from the bottom of the bread buns and spread the yogurt on either side. Fill each sandwich with the mushroom and cucumber mixture. Add another little fresh black pepper before topping with each sandwich bun.
- Serve immediately or chill the mushroom mixture ahead of time and assemble the sandwiches when ready to eat!
Have a Fun meal!
