- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 2 Roma tomatoes
- 2 garlic cloves
- 2 tablespoons olive oil
- ¼ cup chopped flat leaf parsley
- 2 sprigs oregano, stems removed
- 1 cup shredded mozzarella cheese
- 1 sheet of puff pastry
- ½ teaspoon salt
The FunGuy is rolling up this week with a cheesy new mushroom recipe!
We’ve put together a fun savory snack filled with slices of our button mushrooms, tomatoes, and mozzarella. Puff pastry is then used to roll everything together before it’s been baked into a flaky cheesy treat!
Perfect as a quick afternoon snack or to go with your favorite soup or salad.
DIRECTIONS:
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth, trim the stems and slice the mushrooms very thinly. Peel and mince the garlic cloves. Trim the ends of the tomatoes before slicing them into thin rounds. In a small bowl, mix together the garlic, olive oil, parsley, oregano.
- Roll out the puff pastry and spread the herb and oil mixture over, working from the middle outwards to cover the entire pastry. Lay the mushroom slices in a single layer over pastry, then add a layer of the tomatoes, then a layer of the mozzarella cheese.
- Starting from the edge closest to you, roll the puff pastry up in a tight roll. Tuck the ends in then cut the pastry into 6 even sized rounds. Transfer the rounds to the baking sheet and top with any left over mozzarella.
- Place the prepared rolls in the oven to bake 15-18 minutes, or until golden brown.
- Remove the baked rolls and allow to cool 5 minutes before serving.
