- Ingredients:
- 10oz packages of FunGuy Mushroom Stuffers
- 1 red apple
- 1 green apple
- ½ teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 2 tablespoons butter
- ¼ cup shredded sharp cheddar cheese
- 8-10 pecans
With the season of holiday parties and festive feasts upon us every table, no matter the occasion, needs an array of aperitifs to satiate hunger. Obviously a delicious choice would be FunGuy stuffers, particularly these cheddar apple pie pecan stuffers!
This recipe is a way to have a taste of that gluttonous cheddar apple pie void of extra sugars and pastry, while maintaining all the flavorful filling.
Be warned; these will disappear quickly, so we suggest making a double batch!
DIRECTIONS:
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Put the mushrooms, hole side up, onto the baking sheet.
- Wash and slice the red and green apples into thin slices before dicing them. Put them into a bowl along with the cinnamon, nutmeg, allspice, and cloves and stir well to mix.
- Melt the butter in a sauté pan over medium heat. Toss the spiced apple pieces into the pan and sauté, stirring frequently, 5-8 minutes or until becoming tender and browned.
- Spoon half of the shredded cheddar into each mushroom cap before spooning the apple mixture on top. Add a sprinkle of cheddar on each mushroom before placing a pecan on top.
- Bake the mushrooms for 15-20 minutes.
- Remove the mushrooms from the oven and serve immediately.
