- Ingredients:
- 1 tablespoon olive oil
- 8oz package of sliced FunGuy white button mushrooms
- 4 heads endive, cut in half
- 2 tablespoons butter
- 1 small onion, thinly sliced
- Pinch of salt
- ¼ cup shredded parmesan cheese

A spoonful of butter goes a long way to mellow the bitter endive and elevate our favorite earthy FunGuy mushrooms. Sprinkle a bit of sharp parmesan on top and you’ve got a plateful of nutritious and enjoyable fare!
DIRECTIONS:
- Preheat the oven on broil.
- Heat the olive oil in a sauté pan over medium high heat. Add in the FunGuy mushrooms and cook 4-5 minutes or until browned. Transfer the cooked mushrooms to a bowl and set aside.
- Turn the heat down to medium and melt the butter in the pan. Lay the endive halves in the pan, cut side down. Allow the endive to cook 3-5 minutes then turn and cook another 3 minutes. Transfer the endive to an oven safe casserole dish. Season it with a pinch of salt.
- Add the onion slices and mushrooms to the endive and sprinkle the parmesan on top.
- Place the casserole dish in the oven and cook 5-10 minutes or until the onions are tender and the cheese has browned.
- Remove the dish from the oven and allow to cool 3-5 minutes before serving.
